Very Berry Pancakes

For the ultimate Sunday breakfast give this super berry tea infused stack a go. This is perfect for those craving something indulgent without the guilt. 

Ingredients
Makes about 6-8 pancakes depending on the size
1 very ripe banana
1 cup of almond milk
1 ½ cup of oats
2 tablespoon of We Are Tea Super Berry tea
A pinch of cinnamon
1 teaspoon of baking powder
1 tablespoon of coconut sugar (optional)
150 gr of blueberries

To serve
Fresh berries of your choice
Maple syrup or honey

Instructions
Start by brewing the tea. Place the almond milk in a small pan and bring it to boil. Once boiling add the Super Berry Tea. Switch off the heat and let the tea brew for 10-15 minutes.

Place the oats in a blender and blend until you have a flour kind of consistency. Add the banana, the tea infused almond milk, baking powder, cinnamon and coconut sugar if using.

Blend everything well until you have a smooth batter.

Heat half a teaspoon of coconut oil in a pan, then spoon in large spoonfuls of pancake batter. Topthe pancakes with few blueberries (Elisa recommends 4-5 blueberries each pancakes). Allow to cook on a medium heat for 5-6 minutes until golden brown, then flip and repeat on the other side. Repeat this process until you have use all the batter.

Serve the pancakes still warm with fresh berries and drizzle with maple syrup or honey.
